White Tea Production
The most delicate and least produced of all teas, White tea usually hails from the Fujian province of China. Often considered the tea choice of royalty, the production of White tea requires great care and effort that comes from centuries of tradition.
White teas come from special varieties of tea plants, which are cultivated for years before yielding their first harvest, usually taking place during a small window in spring when the buds are still unopened and covered with fine white fuzz. The buds and leaves used to produce White teas are hand chosen and carefully inspected for imperfections. But cultivating for White teas is serious business, leaves and buds cannot be plucked when there is frost on the ground, nor when it is raining, and buds are checked carefully to be sure that none are hollow, damaged or discolored. This tedious process and the small window of opportunity for harvesting make white teas rare and precious.
